CARAMEL LOTUS BISCOFF CHEESECAKE RECIPE

Are you a fan of caramel? lotus biscoff biscuits? and cheesecake at the same time?? Well my darling, you’re on the right track, in this video I did my “no bake caramel lotus biscoff cheesecake” (that’s a long name lol), very tasty, caramelly and very elegant to look at.. hahaha , and you can see the layers of lotus biscuits shining through lol … so pls try it, very easy simple and few ingredients to be needing ..
* Ingredients
For the crust.
- 75g butter (melted)
- 150g biscoff lotus biscuits
For the cheesecake filling.
- 400g soft cream cheese
- 100g lotus biscoff spread
- 50g salted caramel
- 50g white chocolate
- 12g gelatin sheets
- 150g cream
- 60g powdered sugar (optional)
For the decoration.
- Caramel sauce - [ Ссылка ] (same process without adding salt)

* Procedure
For the crust.
- Blend the biscoff lotus biscuits until sandy texture, then add the melted butter and mix
- Put it in the pan and let it harden in fridge for 10 min.
For the cheesecake filling.
- Soak the gelatin sheets in cold water for 5-10 min
- Beat the soft creramcheese together with salted caramel and biscoff spread until creamy.
- Add the melted white chocolate and mix.
- Mix and scrape the bowl at the same time.
- Now add the powdered sugar (you can skip this if it’s too sweet for your taste).
- Beat the cream until firm stiff peaks, then fold it into the cheesecake mixture.
- Squeeze the gelatin sheets and melt it.
- After melted, add 1 scoop of the cheesecake filling into the melted gelatin so it will temper a bit and mix it.
- Then add the gelatin mixture to the cheesecake filling and incorporate everything.
- Put in the crust pan and let it chill in the fridge for at least 5 hours or better overnight.
- Next day, glaze with caramel or biscoff spread, and sprinkle with some crushed lotus biscoff biscuits.
- In the middle, put that 2 pieces of lotus biscoff biscuits and serve.
