Tiramisu cake recipe:
For sponge (7in)
-4 eggs
-100g (3/4 cup) of flour
-150g (3/4 cup) of sugar
-1tsp of vanilla
For frosting
-250ml of heavy cream
-226g (8oz) of mascarpone
-125g (1 cup) of powdered sugar
-1tsp of vanilla
Additional:
-cocoa powder
-a cup of coffee
-2tbsp of rum or whiskey
1. Making sponge: separate the yolks from the whites. Beat the egg whites until frothy. Add half the sugar and beat until stiff peaks. Beat the egg yolks with sugar. Add the beaten egg whites to the yolks and mix gently. Add sifted flour and mix gently. Take a baking dish (7in) covered with parchment and pour the batter into it. Bake 40min at 355F (180C). When ready, turn the baking dish over and let the sponge cool down.
2. Make a cup of coffee and add 2tbsp of alcohol
3. Making frosting: beat cold heavy cream with powdered sugar and vanilla until stiff peaks. Add the mascarpone and mix until smooth. Transfer the cream to a pastry bag and leave some of the frosting for decoration.
4.Making the cake: cut your sponge into 3 equal parts. Put the first part on a plate and soak with coffee, then frost and sift the cocoa onto the top, cover with another part and repeat the same action. At the end, cover the cake well with frosting, wrap it with plastic wrap and press with a cake ring so that the cake is even. Rest for 4 hours.
5. Remove the plastic wrap, spread the cream on the cake and decorate with the rest of the frosting. Cover the whole cake with cocoa powder. Ready.
