Christmas is almost here and you're probably wondering what sort of side dishes you should whip up this year. No Christmas dinner is complete without stuffing. Candice has created a recipe for a delicious vegan stuffing that is a perfect addition to any holiday meal.

To make this stuffing you will start out by breaking your bread up into small pieces and putting them into a mixing bowl. Candice recommends a day old baguette but really any day old bread will do. Breaking the bread into small pieces is a tedious task and if you happen to have any children in the household this is a great way to get them involved in cooking and also save you from the mind numbing, extremely boring task of breaking all that bread into tiny pieces. Kids love to perform tasks like that, and it can be a great way to bond with Mom while she's cooking.
Once your bread is broken up into your bowl add thyme, basil, sage, rosemary, and a pinch of salt. Mix all this together evenly. When mixed add a half of a cup of vegetable broth and mix that all together well also. Be sure you catch those pieces trying to run away from your stirring spoon, it's crucial to this dish to get the broth evenly distributed.
Next you will saute some onion and mushrooms in a pan on medium heat in just a bit of oil. Saute those until the onions become somewhat translucent. Add your sauteed onions and mushrooms to the bowl of bread. Now, melt a 1/4 cup of vegan butter and add it in as well. Add a dash of pepper to this and mix it all together well. Your next step will be to grab a casserole dish and grease it. Candice greased hers with a stick of vegan butter but feel free to grease yours anyway you feel fit. Add the stuffing to your casserole dish and spread it out evenly. Cover your casserole dish with aluminum foil. Preheat your oven to 450' and put your stuffing in for 15-20 minutes.
Candice left her stuffing in for about 25 minutes so keep in mind that cooking times will vary based on the oven you're using. Also, if you want to brown the top a bit you can pull the foil off towards the end of the baking time.
This vegan stuffing recipe is a great addition to any holiday meal but would most likely pair best with a Turkey or a Roast of some sort.
