In this video lets see how to make healthy purple Cabbage soup.

Servings : 3
Ingredients :
Purple Cabbage - 1 cup
Onion - 1/2
Garlic - 2 Cloves
Sugar - 1/2 tspn
Crushed black pepper - 1/2 tspn
Almond milk - 2 tbspn
Salt
Butter /oil
Topping :Wholemeal bread - 3 (chop into cubes)
Procedure :
1. In a pan add little oil. Once it is hot add garlic and onion. Saute well.
2. Add purple Cabbage and saute for a minute or two. Add 1 to 1 1/2 cups of water and cook well for 7 to 8 mins.
3. Once the Cabbage is cooked well, turn off the stove and allow it to cool. Transfer it to a mixer jar and grind it to a fine puree.
4. Add butter in a pan. Pour the Cabbage puree into the pan. Allow it to cook for few seconds.
5. Add almond milk and mix well.
6. Add Crushed black pepper and salt and mix well.
7. Transfer it to a bowl and add roasted wholemeal bread cubes and serve hot.
