Ingredients:
3 cups milk
1 cup heavy or double cream
3 cinnamon sticks
2 tsp vanilla extract
1 tsp nutmeg
5 pasteurized eggs, separated
⅔ cup granulated sugar
¾ cup dark rum or bourbon
To serve:
¼ tsp ground cinnamon
⬇️ How to make Perfect Eggnog ⬇️
0:12 In a saucepan, combine milk, cream, cinnamon, and nutmeg. Bring to the boil over medium heat. Once boiling, remove from the heat and allow to steep.
0:31 In a large bowl or stand mixer, beat egg yolks, vanilla, and sugar until combined and thick ribbons form when the whisk is lifted.
0:50 Slowly pour and whisk in the milk and discard the cinnamon sticks. Continue to mix until the mixture is combined and smooth.
0:56 Add bourbon or rum and, stir. Refrigerate until chilled.
1:05 Beat the egg whites in a large bowl or stand mixer until soft peaks form.
1:18 Gently fold into eggnog until combined. Serve and garnish with ground cinnamon!
