I have the perfect weeknight or even Sunday dinner for you that was created by Zahra (IG: @threecupsofchai).
These Greek style chicken thighs are so easy to put together, and take just twenty minutes of prep time and less than ten ingredients.
The trick to juicy chicken is in the marinade, yogurt is key!
And all you have to do to get your chicken to fall off the bone, is cover your @staub_ca baking dish, bake for 50 minutes, then uncover and bake for another 40 minutes or until golden and crispy.
Here’s how you can make this for dinner tonight:
Staub 9x13 baking dish
6 bone in, skin on chicken thighs
3 medium Yukon gold potatoes
Marinade:
3/4 cup Greek yogurt
Zest of one lemon
5 cloves garlic, minced
1/4 cup lemon juice, or to taste
1/4 cup olive oil
1/2 tsp smoked paprika
2 tsp dried oregano
1 1/2 tsp salt, to taste
1/4 tsp black pepper
Combine the marinade ingredients in a bowl, or right in the Staub baking dish (less dishes!). Add the chicken and potatoes, mix well to coat.
Set aside for at least one hour and up to overnight.
Preheat your oven to 350F.
Tightly cover the Staub baking dish with foil. Bake for 50 minutes. Uncover and bake for another 40-55 minutes, or until the chicken is crispy and golden brown.
Serve with tangy tzatziki, rice, Greek pita and a salad
