Hello Legends! Welcome back to another episode in our lovely journey with Wild Alaska Pollock. Today we are cooking up a delicious summer option, breaded Wild Alaska Pollock fish sticks! These are reminiscent of childhood for many of you in the US, but you've been asking me for a re-do that's just a little bit healthier (and something you can easily whip up any night of the week!) Recipe: Healthy Fish Sticks with Wild Alaska Pollock
Serves: 4
Skill Level: Easy - Medium
Ingredients:
4 skinless Wild Alaska Pollock fillets, sliced into "tender"-sized shapes (about 1" x 4")
1 egg
1 cup finely-ground almond flour
2 tsp fresh or 1 tsp dry thyme
salt
pepper
olive oil
Method:
1. Preheat oven to 350 F.
2. In a shallow bowl, mix almond flour, thyme, salt, and pepper.
3. Using one designated "wet hand" and one "dry hand", alternate dredging the fillets in almond flour, followed by egg, followed by almond flour/breadcrumbs. Set aside.
4. Once oven is preheated, place Wild Alaska Pollock fillets onto a baking sheet and spritz or brush with olive oil.
5. Bake until fully cooked and coating is golden brown, about 12-15 minutes.
6. Serve with lemon wedges and freshly chopped herbs, along with your favorite greens.
