This cocktail from the late 80's is for me the best example of what we call "the dark age of cocktails". Sweet, unbalanced cocktails made with commercial ingredients. But when you look at the flavour profile, this peachy, fruity concoction could be good no? Well I made 2 elevated versions today of that club cocktail that I believe could have its place on craft cocktail bar menus.

HOW TO MAKE THE CLUB SEX ON THE BEACH
2 oz Vodka
2 oz Orange Juice
2 oz Cranberry juice
1 oz Peach Liqueur

HOW TO MAKE THE PRO SEX ON THE BEACH
1.5 oz Vodka
0.75 oz Peach liqueur
0.25 oz Simple syrup
3 oz Fresh Cranberried Orange juice*

*How to make the juice
400 ml fresh orange juice
150 gr Fresh Cranberries
Blend with immersion blender and strain trhough nut milk bag

HOW TO MAKE THE CLARIFIED SEX ON THE BEACH
4.5 oz Vodka
2.25 oz Peach liqueur
1.5 oz Vanilla black tea*
9 oz Cranberried orange juice
1 oz Honey
20 gr Arabic gomme **
4 oz Whole Milk

*How to make the Tea
3 gr Black tea like Darjeeling
5 gr Vanilla pods sliced lengthwise
45 gr Hot water
Brew for 5 minutes

**How to make the Arabic Gomme
10 gr Acacia Powder
10 gr water
Let bloom for about 4 hours

Mix all ingredients together except the milk
In another container, add the milk then pour the cocktail mixture over the milk
Pour everything over a coffee filter and wait for a minute to let the curdles settle at the bottome of the filter
Switch the filter on top of a clean container and let drip slowly until everything is clarified
Once your done, pour your liquid gomme arabic, mix and bottle up.
