We make meatloaf quite often at the Byrd house, but and this family favorite is always good on a sandwich the next day as well. It is so delicious!
And if you are having rough times and need an inexpensive dish to feed you family, then this is it. In fact it helped a lot of folks out during The Great Depression and by the 1950's it became a staple in households across America.
I love the history behind some of these traditional dishes. It is quite interesting.
