MANGO BREAD RECIPE:
2 cups gluten free (or regular, all purpose) flour
2 teaspoons baking soda
1 1/2 teaspoon ground cinnamon
1/2 teaspoon salt
3/4 cup vegetable oil
3 eggs
3/4 cup sugar
1/4 cup brown sugar
1 teaspoon vanilla extract
2 cups chopped mango
1/2 cup chopped walnuts
Preheat oven to 350F and (if you're like me) prepare cupcake liners in cupcake pan for muffins OR grease a loaf pan for more of a bread result.
1. In large bowl mix together flour, baking soda, cinnamon, and salt. After mixed, create a well of the flour mixture and set aside.
2. Combine vegetable oil, eggs, sugars, and vanilla in a separate bowl. After mixed, pour into the well in the flour mixture and stir till combined.
3. Fold in mangos and walnuts.
4. Pour mixture into cupcake liners or loaf pan. For muffins, bake for 35-45 minutes and for loaf bake for 1 hour.
5. Let it cool and enjoy!
