Nombu Kanji is a healthy and delicious #MuttonPorridge made usually during Ramadan month. This #NombuKanji is made using basmati rice, moong dal, mutton mince, and coconut milk. Nombu Kanji Recipe:
Basmati Rice - 1 Cup
Moong Dal - ½ Cup
Oil - 1 tbsp
Ghee - 1 tbsp
Cinnamon - 1-inch piece
Clove - 3 nos
Cardamom - 3 nos
Bayleaf - 2 nos
Fenugreek Seeds - ½ tsp
Cumin Seeds - ½ tsp
Onion (chopped) - ¾ Cup
Ginger Garlic Paste - 1 tbsp
Mutton (minced) - 200 grams
Green Chilli (slit) - 4 nos
Tomato (chopped) - ½ Cup
Coriander Leaves (chopped) - ½ Cup
Mint Leaves (chopped) - ¼ Cup
Water - 2 litres (8 cups)
Salt - 4 tsp
Coconut Milk - 1 Cup
Cooking Instructions:
1. Soak the basmati rice and moong dal together for 20 minutes. After it soaks, lightly break the rice grains by crushing them with your fingers.
2. Heat oil and ghee in a pressure cooker and all the whole spices.
3. Add onion and saute until it turns translucent.
4. Add the green chilli and minced mutton. Saute for 2 minutes on high heat.
5. Add the ginger garlic paste, chopped tomatoes, mint, and coriander leaves. Saute for 2 minutes.
6. Add the soaked rice and dal. Saute for 1 minute, then add the water. Cover and pressure cook for 5 whistles.
7. Once the steam settles, open the lid and add salt and coconut milk. Mix well and serve hot.
Cooking Tips:
1. You can make a vegetarian version of this by skipping the minced meat. You can also add chopped carrots to the dish.
2. Other red meats also work well for this recipe.
