There are many varieties of alfredo, and most contain cream; however, cream is not a traditional ingredient in alfredo pasta. As much as I love using cream, it's not needed in this recipe, as a natural emulsion is made with butter and pasta water to achieve that same creamy texture. Please enjoy this alfredo recipe.
