Paella! A traditional dish of Spain that is absolutely delicious! A very special recipe that I learned from @alvarogarrido10
Recipe
1/2 yellow onion
1/2 red onion
1 green bell pepper
1 red bell pepper
1 package of mushrooms
6 cloves garlic divided
1 artichoke
5-6 tomatoes
1 carton broth (we used veggie broth but you can use fish or chicken)
1/2 white wine
Good dash of saffron
1 tsp chopped rosemary
1 bay leaf
Dash of pimento seasoning (we found this at Marshall’s) or you can use sweet paprika
1 Paella packet
Paella rice
Fish or Chicken we used shrimp, scallops, cod, and mussels
Fresh Lemon slices
This recipe has a lot of steps!
Start by grating your tomato’s with a cheese grater. Discard the skins. Set aside.
Chop mushrooms, pepper, garlic, and onion
Pour grated tomato into a paella pan and cook for 10-15 minutes. Move to the side of the pan and add chopped onions. Cook onions for about 5 minutes or become translucent. Move to side of pan and add peppers. Cook for 5 minutes and move to side of pan. Add mushrooms and cook for five minutes.
In a separate pot boil artichoke 10-15 minutes and chop. Add to pan with vegetables and stir all together. Add the veggie broth and let simmer for about 10 minutes.
In a separate bowl mix together wine, saffron, rosemary, pimento and paella packet. Add to simmering vegetables.
Next take some of the broth from the paella and add to a separate pan. Add rice and fry the rice for 2-3 minutes. Add rice to the paella and stir into the veggies. Cover with foil and allow to cook for about 20 minutes or until rice is done. In the last 2-3 minutes top with your fish. When ready to serve top with lemon slices. Enjoy!!
