Thanksgiving is just days away, and this is my recipe for the best, cheesiest, most decadent mashed potatoes ever!
There's a time for healthy eating, and a time to let go and pretend calories don't exist - and the holidays are definitely the latter! That doesn't mean the entire two-month stretch between Halloween and New Year's should be a free-for-all, of course. I always try to balance out my big meals with a lighter day or two before or afterward, just to ward off that sluggish, overfull feeling. But between the holidays themselves and the inevitable parties with friends and family, the opportunities to indulge are plenty this time of year, and there's nothing wrong with treating yourself.
Along with chocolate, cheese is one of my favorite indulgences. I'm always looking for ways to sneak it into my dishes, and these mashed potatoes are a new favorite! This rich, gooey side dish is almost more cheese than potato, with stretchy, creamy spoonfuls that seem to defy gravity. It's a special-occasion showstopper that can perfectly accompany turkey, roast beef, ham, or any other main-dish protein. Everything's better with cheese!
