Ingredients
- 350g Chantenay carrots (or similar)
- olive oil
- salt & pepper
- 2 x tbsp maple syrup
- 1 x tbsp lemon juice
- fresh thyme
Method
1. Pre heat oven to 200 degrees
2. Wash & half carrots down the middle (peel them if you want)
3. Place them in foil lined baking tray and cover with olive oil. Use hands to fully coat the carrots and then sprinkle with salt & pepper
4. Place carrots in oven for ‘first cook’ for 20-30mins
5. Whisk together maple syrup and lemon juice
6. Take carrots out of oven, pour over maple & lemon mixture - put back in oven for 10mins
7. Take out, serve & enjoy ☺️
