In this video, I show you how I clean and marinate guinea hen, known as poul di in Haitian-Creole. I had the butcher cut the guinea hen into 8 pieces. This will help me out when its time to cut to smaller pieces. Allow this to marinate for an hour or overnight. In another video, I will show you how I cooked this guinea mean. Link is below.
