~~Berry Vanilla Overnight Oats~~
~Ingredients~
-½ cup rolled oats or ¼ cup rolled oats and ¼ cup quinoa flakes
-1 tbsp chia seeds
-a few drops of vanilla stevia extract or 1 tsp vanilla extract
-2 tbsp vanilla flavored non dairy yogurt
-1 cup unsweetened non dairy milk
-raspberries or any other fruit of choice
~Method~
-combine all ingredients in a jar and mix well or shake closed jar to combine
-allow to sit in the fridge overnight
-top with berries or other fruit in the morning if it was not done during initial preparation
*this will stay fresh for 7-10 days in the fridge
~~Almond Butter Banana Overnight Oats~~
~Ingredients~
-nearly empty almond butter jar
-½ cup rolled oats
-1 tbsp hemp seeds
-sweetener, if desired
-1 banana, sliced
-1 cup non dairy milk
-other fruit of choice for topping (optional)
~Method~
-combine all ingredients in the almond butter jar and allow to sit in the fridge overnight
-top with fresh fruit in the morning if desired
*this will stay fresh for 7-10 days in the fridge
~~English Muffin Breakfast Sandwich~~
I’m not going to insult your intelligence by making a written recipe for such simple sandwiches, but incase any of you are curious as to what english muffins I used, I will insert a link to them here as I know it can sometimes be difficult to find a vegan english muffin. [ Ссылка ]
~~Super Seed Breakfast Cookies~~
~Ingredients~
-2 bananas, mashed
-¼ cup peanut butter
-¼ cup applesauce
-1 tbsp agave (optional)
-1 ¼ cup rolled oats
-¼ cup raisins
-1 tbsp flax seeds
-1 tbsp chia seeds
-1 tbsp hemp seeds
-cinnamon to taste
~Method~
-combine all ingredients in a mixing bowl
-form cookie shapes onto a lined baking sheet
-bake at 350 degrees for about 12 minutes
-allow to cool fully before enjoying
*these will stay fresh in a airtight container at room temperature for 7-10 days
~~Blueberry Power Muffins~~
-1 banana, mashed
-1 cup unsweetened non dairy milk
-2 tbsp apple sauce
-2 tbsp maple syrup
-¼ cup granulated sweetener of choice
-1 flax egg
-¾ cup flour of choice (oat, almond, and coconut flours are not recommended)
-2 tsp baking powder
-1 tsp baking soda
-1 tsp cinnamon
-dash of sea salt
-1 tsp vanilla extract
-¼ cup rolled oats
-2 tbsp hemp seeds
-1 cup blueberries, fresh or frozen
~Method~
-in a mixing bowl, combine mashed banana, milk,apple sauce, maple syrup, granulated sweetener, and flax egg
-add all other ingredients, except blueberries, and mix until just combined
-fold in blueberries
-add mixture to a lined or greased muffin pan
-bake at 350 degrees for 15-17 minutes
-allow to cool full in the pan before enjoying
*these should be kept refrigerated, and will stay fresh for 7 days
*I recommend microwaving shortly before eating
