This series and summer is incomplete without Mango Sticky Rice 🥭🍚 The sweetness of ripe mangoes paired with the creamy and sticky goodness of rice, you will fall in love with this recipe!
Here’s how you make this delightful Thai dessert at home ☺️
Ingredients :
Short Grain Rice - 3/4th Cup (Soak in hot water)
Coconut Milk - 3/4th Cup
Water - 1/4th Cup
Kewra Water - 1/2 Tsp
Condensed Milk - 3 Tbsps
Pinch of Salt
Mango Slices - Garnish
+ more coconut milk & condensed milk to adjust the rice after it has cooked(I added 1/3rd cup more milk &1.5 Tbsps more condensed milk)
Coconut Sauce :
Coconut Milk - 1 Tbsps
Condensed Milk - 2 to 3 Tbsps
Mung Dal namkeen- Garnish
Black Sesame Seeds - Garnish
Process :
* Start by soaking the short grained rice in hot water for at least 15-20 minutes
* To a saucapan, add in the drained soaked rice along with 3/4th cup coconut milk, 1/4th cup water & a pinch of salt
* Bring it to a simmer, turn the heat to low, cover it and cook it for 10 mins
* After the 10 mins, add in the condensed milk along with the kewra water - give the rice a good mix & let it sit in a covered pot until it cools down
* Add more coconut milk to hyrate the rice & more condensed milk to adjust the sweetness as per your choice
* Add the sticky rice to a bowl, press it down well & refrigerate for 5 minutes
* Meanwhile just mix condensed milk & coconut milk to make the sauce (3
* Turn the rice bowl upside down on a serving plate & release the rice
* Serve alongside some freshly sliced mangoes, pour over the coconut condensed milk sauce & garnish with black sesame seeds & crunchy mung dal
* Serve cold & Enjoy 🍚🥭
