Honestly speaking, I've never heard of Guyanese #majeedcartwheel before until it was shared to me by one of my subscribers TY. It's made of 3 separate dishes that we all know and love which are #sweetandsaltbake and boil and fry channa. Both the sweet and salt bake are faintly dense but fluffy with a slightly crispy exterior. Fried to perfection with simple but not so exotic ingredients makes these bake addictive by themselves or with boil and fry channa stuffed in them. The channa is boiled soft with a creamy and fluffy texture, which are fry with savory spices and herbs giving the channa complex flavors. Even though the geera (cumin) adds a unique taste to the channa, it still retains it's beanie flavor but also the nutty flavor and earthy notes that can suit any palate. To add a bit of spicy flavor to the cartwheel, you must top it with my homemade wiri wiri pepper sauce, which is made with my homemade Guyanese lime achar. This majeed cartwheel is absolutely a great vegetarian dish whether it's for breakfast, lunch or dinner. Thank you and enjoy!

MAJEED GUYANESE CARTWHEEL
SWEET BAKE
INGREDIENTS:
2 Cups all-purpose flour
1/4 Cup white sugar
2 TBSP Unsalted butter
1/2 TSP Baking powder
1/2TSP Yeast
1 TSP nutmeg
1 TSP Vanilla essence
Oil for frying
SALT BAKE
2 Cups all-purpose flour
1 & 1/2 TSP Salt
2 TBSP Unsalted butter
1/2 TSP Baking powder
1/2 TSP Yeast
1 Small onion diced
2 Wiri wiri pepper (remove seeds) and diced
Sunflower Oil for frying
FRY CHANNA (CHICK PEAS) FILLING
INGREDIENTS:
3 Cups channa (chick peas) soak overnight
1 TBSP Guyana fine thyme
1 TBSP Jamaican thyme
1 TSP Black pepper
2 TBSP All purpose seasoning
2 TBSP Geera (cumin) powder
2 TBSP Salt
1 Large white onion diced
6 Green onions chopped
Sunflower oil for frying
MAKING THE MAJEED GUYANESE CARTWHEEL
Cut large slit and open bake which becomes a pocket. Add 1 leaf lettuce, 1 slice tomato and 2 slices of cucumber. Fill the pocket with the channa (chick peas). Add 1 TSP of any type of pepper sauce. Plate and serve.
WIRI WIRI PEPPER SAUCE WITH LIME ACHAR
INGREDIENTS:
10 Cloves garlic crushed
1 Medium onion chopped
2 Cups whole wiri wiri peppers
1 cup White vinegar
3 TBSP Sea salt
1/2 Cup lime achar
