HOMEMADE PESTO

In a world where we're constantly looking for shortcuts, making pesto with a mortar and pestle is a reminder to slow down and savor the process. 🌿
Ingredients:
40g fresh basil leaves
40g pine nuts
1.5 tbsp olive oil
1 tbsp water
salt to taste
3 cloves garlic
1 tsp nutritional yeast (optional)
Method:
Add basil and a pinch of salt to a mortar and mash with a pestle until you have a paste. Add garlic and mash again until the garlic cloves are crushed. Add pine nuts and mash until you have a paste where all ingredients are well combined. Add nutritional yeast and olive oil and combine. Add water to thin it out if needed to reach your desired texture. Season with salt to taste and your pesto is done! Store in the fridge in an airtight container, it should stay good for up to a week.
