Discover the magic behind this exceptional sparkling wine as we unveil the intricate Méthode Champenoise process that ensures the highest quality in every bottle. While Champagne is traditionally produced from Chardonnay and Pinot Noir in cool climates, Libelle breaks the mold by using 100% Picpoul Blanc, a white Rhône grape variety known as "Lip Stinger" in French, which preserves its acidity even in warm climates.
The process of Libelle:
Harvest (Fall 2020): The Picpoul Blanc grapes are carefully harvested.
Still Wine (Fall 2020): First fermentation takes place.
Liqueur de Tirage (Winter 2020): Secondary fermentation begins as yeast and sugar are added, creating those delightful bubbles.
Aging (2021 - 2022): During this time, autolysis of yeast occurs, a crucial part of the aging process. Our Libelle program ages the "lees" in the bottle for an impressive 24-30 months before riddling.
Riddling, Disgorging, and Dosage (Fall 2023): "Riddling & disgorgement" marks the removal of lees from the bottle, followed by the addition of the "dosage," a precise blend of sugar and wine, finely tuning the flavor profiles of the finished product.
