PANEER TAMATAR PARANTHA
Give your regular paneer paratha a twist of tomato. To make this Paneer Tamatar Parantha, mix well spices, wheat flour and tomato puree to knead a soft dough. To make paneer stuffing, mix cottage cheese, coriander, chili and salt. Fill this stuffing into a dough ball and roll it. Cook your paratha in ghee. Ingredients
1½ cups grated cottage cheese (paneer)
2 tsps tomato powder
¾ cup fresh tomato puree
1½ cups whole wheat flour + for dusting
Salt to taste
1 tsp Tata Sampann Chilli Powder
2 tsps ghee
1 medium onion, chopped
2 tbsps chopped fresh coriander
2 green chillies, chopped
½ tsp carom seeds (ajwain)
Yogurt for serving
Method
1. Take whole wheat flour in a bowl. Add salt, tomato powder, Tata Sampann Chilli Powder, tomato puree and mix well.
2. Add ¼ cup water and knead to soft dough. Add ghee and knead well. Cover with a moist muslin cloth and set aside for 10-15 minutes.
3. Take cottage cheese in a bowl. Add onion, coriander, green chillies, salt, carom seeds and mix well.
4. Divide the dough into equal portions and roll into balls. Make a dent in the centre and stuff with the cottage cheese mixture.
5. Gather the edges and seal properly. Dust some flour and roll into a thick disk.
6. Heat a nonstick tawa. Place prepared parantha and cook till underside is golden brown. Flip and cook on other side as well.
7. Drizzle some ghee and continue to cook for a minute.
8. Serve hot with yogurt.
