Next time you want that perfect piece of Lo on you bagel, considering making it yourself! It's very easy and tastes absolutely amazing!
You will need filet of fresh salmon with skin attached.
Mine is 1,5 lbs.
For each pound of fish you will need:
1 tbsp sugar
1 tbsp salt(kosher or sea salt is the best)
1 tbsp spices combined:
I have: blend of peppercorns, coriander seeds and 2-3 small bay leaves
You might want to add dry dill for added flavor, but it's optional.
Use only glass container to preserve your fish, preferably with lid.
First wash and dry your fish.
Remove all the bones with tweezers.
Put fish skin side up and add 2 teaspoons of spice mix.
Turn fish flesh side up and add remaining amount of spice mix.
Close the lid and put in the fridge for 24 hours.
Next day you will see juice will appear in your container, you need to drain it.
Taste the fish.
If you happy with the taste do not add more salt, if not add 1 tsp of salt, close the lid and return back to the fridge for another 24 hours.
next day, scrape off the spices.
Slice and enjoy!
You might want to slice whole filet and keep it in a glass jar for about a week.
If you not planning to finish it within a week you can freeze it!
