This creamy, zesty lemon pasta with CRISPY chicken is definitely not a low calorie dish, but it's simple to make and will impress anyone... Including prospective dates...*wink wink
Ingredients:
Crispy chicken:
2 chicken breasts sliced
150g breadcrumbs
70g grated parmesan
Handful fresh chopped parsley
All-purpose seasoning of your choice (lemon pepper seasoning would be great!)
Vegetable oil for frying
Creamy sauce:
2 TBSP butter
150g pasta
50ml pasta water (you may need more or less, depending on how runny you want your sauce to be)
300ml double cream
3 cloves minced garlic
1 TSP Italian mixed herbs
1/2 TSP chilli flakes (adjust to your taste)
Salt and pepper to taste
Lemon zest from 2 lemons
3 TBSP lemon juice
Handful fresh parmesan
Handful fresh chopped parsley
Tip: DON'T add lemon juice whilst the sauce is still cooking!!!!!!!!!
Add lemon juice only AFTER removing the sauce from the heat. This will prevent the sauce curdling!
