In today's video I'm putting a twist on Texas twinkies by cooking up some honey chipotle Texas twinkies! By now I'm sure you've heard of this awesome snack, and no matter how you make them, they're bound to be delicious. That being said, I found these honey chipotle Texas twinkies to be absolutely amazing! They were the perfect balance of sweet, heat, and salty! Best of all, Texas twinkies can be made ahead of time and you can smoke them the next day if you so cheese. Texas twinkies do require a bit of prep to them, but I PROMISE they're 100% worth it! I went ahead and used my Ash Kickin' BBQ Honey Chipotle rub for these (link and discount code below) and then paired it was a nice little honey BBQ sauce at the end, 10/10...will definitely make again, and again, and again!!

| Ingredients |

-1 block of cream cheese
-1 cup of chopped brisket
-1 package of thin cut bacon
-Jalapenos
-Ash Kickin' BBQ Honey Chipotle Rub
-Honey BBQ Sauce

| Instructions |

Prep:

1. Slice the jalapenos down the side and remove any seeds and veins (you can also cut them in a T fashion if that's easier for you).

2. Season a block of cream cheese with Ash Kickin' BBQ Honey Chipotle rub, and put the cream cheese, and jalapenos on the smoker at 250° F for about 20-30 minutes just to soften the jalapenos and the cream cheese.

3. After the jalapenos and cream cheese have softened, mix the cream cheese with the chop brisket, and stuff each of the jalapenos.

4. Once the jalapenos are stuffed, wrap each one with a piece of bacon per the instructions of the video. You might need a piece and a half of bacon for larger jalapenos.

5. Once the jalapenos are wrapped in bacon, season once more with the Ash Kickin' BBQ Honey Chipotle rub.

6. At this point, the Texas twinkies can go on the smoker, or in the fridge until you're ready to cook.

| Cooking |

1. Set your smoker temp to 275° F, and put the Texas twinkies on the smoker, and let them smoke until the bacon is done (about 1 to 1.5 hours but go by look).

2. Once the bacon is done, mix some honey BBQ sauce with a little bit of water to thin it down, and sauce each Texas twinkie. Let the sauce set for 5 minutes.

3. After the sauce has set, remove the Texas twinkies from the smoker, and allow them to cool before eating.

4. Eat and enjoy these Honey Chipotle Texas Twinkies!!
