This is part 1 of a 2 part, Day of the Dead video weekend. And yes, I know this will post on October 31, PDT. And yes, I know that Day of the Dead is actually November 2nd. I will eat some dead bread in video #2. Even though it is not diet food, I do it for you.
Seafood Salsa Recipe:
1 lb cocktail shrimp or shellfish of choice
1 lb Roma tomatoes
2 avocados
1/2 large onion
1/2 cup chopped cilantro
juice of 2 limes
4 oz. clam juice
4 oz. ketchup
4 serrano chilies (use less if necessary)
salt to taste
Boil shellfish until just tender, do not overcook. Let cool, then cut into small, bite-sized pieces. Cocktail shrimp is already cooked. Chop finely tomatoes, avocados, onion, cilantro, chilies, and add to mixture. Squeeze juice of two limes into the salsa and add the clam juice and ketchup. Salt to taste.
Enjoy with corn tortilla chips. :)
