Ci Fan Tuan, sometimes just known as ci fan or fan tuan, is a Shanghainese and Taiwanese breakfast “burrito” usually made up of sticky rice, you tiao (Chinese fried dough), preserved or pickled vegetables, and pork floss. Sometimes an egg omelette is added inside, and there are various different toppings used by different street vendors.
This video also includes a recipe on how to make vegan pork floss from king oyster mushrooms.
Ingredients I used:
2 king oyster mushrooms
Marinade for the mushrooms: 1 tbsp soy sauce, 1 tbsp rice wine, 1 tsp sugar
1/2 cup chopped pickled mustard greens
1 you tiao
2 cups thai sticky rice, rinsed and soaked for 30 mins (1 1/3 cup water for cooking)
A sprinkle of black sticky rice
Salt and oil for pan frying mushrooms and pickled greens (no salt for the pickles)
