- 1 large bunch lacinato kale, stems and ribs removed, chopped
- 1 cup cooked quinoa or lentils
- 1/3 cup sliced sun-dried tomatoes in oil
- 1 medium ripe avocado, cubed
- 1/2 cup crumbled feta
- 1/4 cup roasted, salted pistachios, chopped
**Instructions:**
1. Preheat the oven to 400°F. Thinly slice the sweet potato crosswise on a mandolin or with a sharp chef’s knife (aim for wafer-thin slices). Spread them on a rimmed baking sheet, toss with a drizzle of olive oil, salt, and black pepper. Roast for 15-25 minutes, depending on size/thickness, tossing once halfway through, until tender and slightly crisp around the edges.
2. While the sweet potato is roasting, combine tahini, balsamic vinegar, garlic powder, and 1/4 tsp. salt in a glass jar or bowl. Stir to combine and gradually add 2 to 3 Tbsp. cold water, stirring each time, until the dressing is smooth and creamy.
3. Place the chopped kale in a large bowl, drizzle with a bit of EVOO, and season with a pinch of salt. Massage the oil and salt into the greens with your hands until they soften, about 30 seconds.
