Ingredients:
For the Spicy Salmon Tartare:
8 ounces (about 225g) sushi-grade salmon, finely diced
2 tablespoons mayonnaise
1 tablespoon sriracha sauce (adjust to your preferred level of spiciness)
1 teaspoon sesame oil
1 green onion, finely chopped
1 teaspoon black sesame seeds (for garnish, optional)
Salt and pepper to taste
For the Crispy Rice:
1 cup sushi rice
2 cups water
2 tablespoons rice vinegar
1 tablespoon sugar
1/2 teaspoon salt
Vegetable oil for frying
For the Soy Sauce Dressing:
2 tablespoons soy sauce
1 tablespoon rice vinegar
1/2 teaspoon sugar
1/2 teaspoon grated fresh ginger
1/2 teaspoon minced garlic
Instructions:
Prepare the Crispy Rice:
Rinse the sushi rice thoroughly in cold water until the water runs clear.
In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is cooked and tender.
In a small saucepan, combine the rice vinegar, sugar, and salt. Heat over low heat until the sugar and salt dissolve.
Transfer the cooked rice to a large bowl and drizzle the vinegar mixture over it. Gently fold the rice to combine. Allow it to cool to room temperature.
While the rice is cooling, shape it into small patties, about the size of a sushi roll. Press them firmly to ensure they hold their shape.
Heat vegetable oil in a pan over medium-high heat. Fry the rice patties until they are golden and crispy on both sides, about 2-3 minutes per side. Remove them from the oil and drain on paper towels.
Prepare the Spicy Salmon Tartare:
In a mixing bowl, combine the finely diced salmon, mayonnaise, sriracha sauce, sesame oil, and chopped green onion. Mix well to combine.

Prepare the Soy Sauce Dressing:
In a small bowl, whisk together the soy sauce, rice vinegar, sugar, grated fresh ginger, and minced garlic. Set aside.
