Ingredients:
Oil- 2Tbsp
Curry leaf- Few
Whole Spices:
Cinnamon- 1
Cloves- 2
Cardamom- 1
Star Anise- 1
Bayleaf- 1
Onion- Tomato Sauce:
Onion- 1 (medium size)
Tomato- 2 (medium Size)
Green Chilly- 1 (Optional)
Ginger Garlic Paste- 1 Tsp ( Ginger-1 inch & Garlic- 4 Cloves)
Salt-1 Tsp (or to taste)
Turmeric Powder- 1/4 Tsp
Chilli Powder or Cayenne Pepper- 1/2 Tsp (adjust to taste)
Kashmiri Chilly Powder or Paprika Powder- 1 Tsp (adjust to taste)
Cumin Powder- 1 Tsp
Coriander Powder- 1 Tsp
Garam Masala- 1 Tsp
Cashew- Coconut Paste:
Grated Coconut or coconut milk- 1/4 Cup
Cashews- 1/4 Cup
Roasted Channa Dal- 1 Tbsp (Optional)
Fennel Seeds- 1 Tsp (optional)
Water- 1/4 Cup
Vegetables:
Carrot- 1 Cup
Beans- 1 Cup
Green Peas- 1 Cup
Potato- 1 Cup
Cauliflower- 1 Cup
Instructions:
1. Grind all the ingredients listed below onion- tomato sauce.
2. Turn on the sauté mode and let it heat. Add oil and whole spices. Sauté for 30 seconds.
3. Add the puree, stir, and saute for 3 to 5 minutes till the raw smell goes off.
4. Add all the vegetables and stir them well. Add 1 Cup of water.
5. Close the lid and secure the vent.
6. Change the instant pot setting to manual or pressure cook mode at low pressure for 1 minute. After the instant pot beeps, do a quick release.
7. Grind the ingredients listed below in the cashew- coconut paste.
8. Open the pot. Add cashew- coconut paste, stir it well and saute for a couple of minutes.
9. Garnish it with coriander or cilantro leaves.
10. Serve it with rice, roti, or naan.
