I've started a new series of videos as curd nerds have been asking for recipes to use with the cheese that they make.
The first video is Mushroom Risotto and the ingredients are listed below.
Ingredients
350g / 12.5 oz Arborio Rice
Sprig of Rosemary finely chopped
Sprig of Thyme finely chopped
2 Cloves of Garlic, crushed
80g / 3 oz Ricotta Salata or Parmesan
1 Medium Onion, chopped
15g / 0.5 oz Dried Porcini Mushrooms, chopped
600g / 21 oz Fresh Mushrooms, any type will do
1 knob of butter, about 2 Tablespoons
120ml / 1/2 cup Dry White Wine
1 Tablespoon Lemon Juice
Sourdough bread for croutons
Olive oil
