Cheap and easy sushi rolls you can make at home! This spicy tuna roll recipe uses canned tuna instead of expensive raw toro (or other cuts of tuna). It's an easy appetizer, side dish, or late night snack to make that's ready in 30 minutes or less.
One essential ingredient for good sushi rolls is short grain Japanese rice. Unlike medium grain rice, which is widely sold in the US and Canada (brands like Nishiki, Botan, and Kokuho are medium grain), short grain rice is stickier in texture. What this means for making rolls and nigiri sushi is that it molds more easily and sticks together (holds better) than medium grain rice. My favorite brand of short grain Japanese rice is Tamanishiki.

Ingredients:
• 5 ounces can tuna in water (well drained)
• 1 tablespoon sriracha sauce
• 1/2 teaspoon chili oil
• 1/2 teaspoon rice vinegar
• 2 tablespoons scallions (finely chopped)
• 1 1/2 tablespoons light mayonnaise
• 6 nori sheets (seaweed)
• 1 1/2 cups cooked Japanese rice (room temperature)
