Erissery is one of the famous sadya special recipe in Kerala. Here iam showing how to make Pumpkin Erissery
Ingredients
For Curry
Yellow Pumpkin - 1 1/2 Cup ( cut in square Pcs )
Kidney beans - 1/2 Cup
Green chillies -3 Nos
Grated Coconut - 1/2 Cup
Cumin seeds - 1/2 Tsp
Turmeric powder - 1 /2 Tsp
Shallots
Pepper Powder
Seasoning :-
Grated Coconut - 1/2 Cup
Shallots - 4-5 nos
red Chillies - 3-4 Nos
Curry leaves
Mustard seeds - 1/2 Tsp
Coconut Oil 2 Tbsp
Salt
Soak Beans 5 hrs. Cook beans and Pumpkin separately. Add Green chillies then mix and cook again. Grate coconut with cumin , shallots and turmeric powder. add this fine paste to boiling mix. mix it well. keep low flame and go with seasoning.. Add Coconut Oil add mustard, then shallots, then red chillies then coconut , once coconut turned to brown color add curry leaves the again saute for 2 minutes, its done.. bring to boiling curry.. mix this well.. check salt.. finally add 1 Tsp full pepper powder mix once again.... thats it.. Our tasty Erissery Ready.. Enjoy this your Rice..
