My SINGAPORE chilli crab with ingredients to make it better in INDIA :P
Ingredients -
1/2 kg crab
3 kashmiri chilli - boil it
3 gunter chilli - boil it
2 green chilli
2 garlic bulb
1/2 inch ginger
Green onions - bulbs and stems separated.
Chop all off this in a chopper or by hand and set aside.
1 egg yolk beaten
corn slurry - corn flour + water mixed and set aside.
SAUCE -
Ketchup
Sugar
Miso paste ( soya bean paste if you have access to a thai brand)
Mix it up warm water
Salt to taste
STEPS -
In a heated pot, add oil.
once heated add the chopped ingredients and add salt. See that the flame is on medium as the tiny chops could burn. If you arent good at handleing the heat switch off the gas and drop it in and switch it on in about 70 seconds.
Once softened add the sauce and let it cook for about 5 minutes.
Add some chopped green onions.
Next add the slurry.
Next add the egg and mix immediately.
Add the washed crabs and stir it around.
Let it cook for about 7 - 12minutes. You will notice the shell of the crab changes to orange.
Add salt to taste.
Served with steamed rice.
