In this video, I'm sharing a super yummy winter muffin recipe using apples, spices and ground almonds. I'm using green apples but you can use any apple you have at hand and you can make this delicious and comforting muffins. The method is simple; prepare dry ingredient, prepare wet ingredient and mix the two together and bake! The whole house will be fragrant and comforting while these bake and you can enjoy these muffins warm or chilled. Since we're using almond flour and brown sugar, these can also be classified as healthy muffins and no guilt while consuming them. Enjoy!
Spiced Apple Muffins Recipe
2 small green apples peeled, cored and diced (114g)
1/2 cup brown sugar (80g) - increase if you prefer sweeter muffins
1/2 tsp cinnamon, 1/4 tsp ginger, 1/4 tsp nutmeg, 1/4 tsp clove
1/4 cup / 60g salted butter (melted)
1/4 cup milk (42g)
1 egg (beaten)
1 cup plain flour (120g) + 1/4 cup almond flour
1 tsp baking powder
1/8 tsp salt
slivered almond for toppings
bake at 350f / 180c for 18-22 mins
