Presenting the Lemon Tang, Mushroom Salad

What’s in it?
4 baby cucumbers - sliced not too thinly
250g mushrooms - sliced thinly & raw
Handful parsley - chopped - added to taste
Salt for flavouring
9 tbsp hemp hearts - 3 tbsp per person for 10g protein
1/2-1 cup roasted chick peas for the crunch & protein

For the dressing,
1/4 cup olive oil
1 large lemon juiced
1/4 tspn salt
1/2 tspn chilli flakes (optional)
Shake these in an empty jar
.
Mix everything & enjoy!
