Ingredients -
1/2 cup yellow moong dal
1/2 cup rice
1/2 cup chopped pumpkin
1/2 cup chopped potato
1/2 cup fresh green peas
1/2 cup cauli flower florets
1/2 cup chopped French beans
1 sliced tomatos
2-3 green sliced green chilis
1 tbsp ghee
1 tsp Sugar
2tbsp mustard oil
1 tsp cumin seeds
1 bay leaf
1 inch cinnamon stick
3-4 cloves
2 whole dry red chilis
1 tbsp grated ginger
1/4 tsp hing
1 tsp red chili powder
1/2 tsp turmeric powder
1 tsp salt
4 cups water
Method -
Roast dal for 3-4 minutes on low flame. Take it out. Add rice and dry roast for 2 minutes.
Heat 2tbsp oil and add all chopped vegetables and cook till they done properly. Take them out.
Now wash them nicely with water and soak them. Keep aside.
Add cumin seeds in leftover oil, bay leaf, cinnamon stick, cloves, dry red chilis. Cook for few seconds. Add grated ginger.
Remove water from dal rice and add in kadai, roast for 2-3 minutes, add red chili powder, turmeric powder, salt and 4 cups hot water. Cover and allow to cook on low flame for 10 minutes, after 10 minutes, uncover the kadai and add cooked vegetables, tomatoes, fresh green peas. Cover and cook till water absorbs properly. Uncover and give a good stir. Add fresh coriander, garam masala, sugar and ghee. Mix and enjoy delicious Bengali khichdi.
