Ingredients for Bouquet Garni/Sachet:
Garlic cloves 3-4
Coriander seeds 1 ½ tbsp
Cumin seeds 1 tbsp
Cloves 15-20
Black peppercorns 2 tsp
Black cardamom 2
Green cardamom 6-7
Bay leaves 2
Cinnamon sticks 2-3
Fennel seeds 1 tbsp
Muslin cloth
Ingredients for Beef Broth:
Boneless Beef + 1 bone 1 kg
Water 2 L
Prepared Sachet
Salt to taste
Green chilies 3-4
Ingredients for Pulao:
Water 1/4 cups
Guard Basmati Rice 3 cups
Oil 1/4 cup
Onion (sliced) 1 cup
Boiled chickpeas 2 cups
Black raisins 1/2 cup
Boiled beef
Salt to taste
Red chili powder 1 tsp
Garam masala 1 tsp
Black peppercorns 1 tsp
Beef broth 6 cups
Directions for Sachet Preparation:
1. Take a muslin cloth and put garlic cloves, coriander seeds, cumin seeds, cloves, black peppercorns, black cardamom, green cardamom, bay leaves, cinnamon sticks, fennel seeds and make a sachet. Set aside.
Directions for Beef Broth Preparation:
2. In a large pot add beef, water, salt, sachet and green chilies. Bring it to boil. Cover with lid and let cook on low flame until meat gets tender.
3. Once the meat gets tender, extract the broth and keep aside until used.
Directions for Pulao Preparation:
4. In a bowl add water and Guard Basmati Rice. Soak for 25-30 minutes. Strain and set aside,
5. In a pot heat oil and add onion and cook until light golden brown. Add black peppercorns and cook for a minute. Add salt, red chili powder, garam masala powder and mix well.
6. Add boiled beef and cook for a minute. Add boiled chickpeas, black raisins and cook for another minute.
7. Add soaked rice and cook until 80% water has evaporated. Cover with lid and steam for 10-15 minutes on low flame.
8. Serve hot.

Cooking time: 1 hr 30 mins
