Recipe:
For the marinade:
- 3-4 tablespoons/45-55ml olive oil
- 2 teaspoons smoked paprika, or normal one if you want
- 1 teaspoon dried oregano
- 1 teaspoon Cajun mix
- 1 tablespoon Worcestershire sauce
- 1 tablespoon salt
- Half a tablespoon freshly ground pepper
- 1 teaspoon garlic powder
- Juice from half a lemon
For the rest:
- 1 chicken, mine was about 3 lbs/1,4kg
- 2 medium onions
- 2 big carrots, cut in big pieces
- 2 celery sticks, cut in big pieces
- About 1,3 lbs/600g small potatoes cut in half, you can use any kind of potatoes
- A little olive oil to put in the bottom of the dutch oven and some to drizzle on top
- 4-5 garlic cloves
- 1-2 sprigs rosemary, depends how big they are
- 1-1,5 tablespoons fresh thyme
- 2 tablespoons/30g of butter to put on the chicken
- 0,5 cup/120ml chicken or vegetable stock
- Salt and pepper
Cook in a preheated oven, fan on for 60-70min with the lid on 392F/200C and then without the lid for 25-30 minutes more or until you like the color of the chicken!
