Yema Frosting
Ingredients:
4 cans of evaporated milk (385ml each)
3 cans sweetened condensed milk (395ml each)
1 thickened cream/whipping cream (600ml)
5 egg yolks (290 g)
2 tsp freshly squeezed orange juice
1tsp vanilla extract
1/2 cup cornflour
2 tbsp butter
Procedure:
1. In a saucepan, put evaporated milk, condensed milk, and thicked cream.
2. Add the orange juice and vanilla extract to egg yolks
3. Pour the egg yolks into the milk mixture
4. Add 1/2 cup cornflour and mix
5. Strain the milk mixture and mix until it is lump-free
6. Cook over a medium-low fire with continuous stirring until thick.
7. Set aside and let it cool.
8. Consistency must be thick but still spreadable.
Ube Yema Frosting
Ingredients:
6 cups cooked yema frosting
1/2 cup halayang ube
1 tbsp ube extract
1 tbsp butter
Procedure:
1. In a pan, put cooked yema frosting
2. Add halayang ube and ube extract then mix.
3. Cook over a medium-low fire for about 10-15mins while stirring continuously.
4. Add 1 tbsp butter and mix.
5. In a bowl, strain the ube yema mixture and let it cool.
