Oh-so simple Seafood Platter in the Philips airfryer
Preparation and cooking time: 30 mins
Serves 6
Ingredients:
Cold & Fresh Seafood & Condiments
12 cooked King prawns, peeled with tails in tact
200g smoked salmon slices
Rock salt, Tartare sauce, seafood sauce, Lemon wedges and caper berries, to serve
Herbs and fruit, to garnish (we used mint, watermelon, strawberries and grapes)
Phlips Air fried oysters Kilpatrick
2 rashers streaky bacon, thinly sliced
12 fresh oysters
2 tablespoons tomato sauce
1 tablespoon Worcestershire sauce
½ teaspoon Tabasco sauce
2 teaspoons finely chopped fresh parsley
Philips Air fried lemon pepper calamari
1 x 200g calamari tube, cleaned, halved lengthways, then sliced widthways into thin strips
1/3 cup cornflour
1 egg
2/3 cup panko breadcrumbs
1 tablespoon lemon pepper seasoning
olive oil cooking spray
2 teaspoons finely chopped flat leaf parsley leaves
Philips Air fried sesame crusted fish cocktails
1/3 cup plain flour
1 egg
2/3 cup panko breadcrumbs
¼ cup sesame seeds (we used a mixture of white and black)
A pinch of salt & black pepper
250g boneless, skinless white fish fillets, cut into approx. 4cm pieces
olive oil cooking spray
1. Begin to prepare Air fried oysters Kilpatrick. Put bacon in Philips XXL SMART Airfryer basket. Set temperature to 200C and time to 7 minutes. Press the dial in to begin cooking. Remove, finely dice, then set aside. Combine the sauces in a small bowl and set aside.
2. Arrange prawns, smoked salmon and remaining garnishes on a platter or stand, leaving room for the cooked seafood. Set aside in the fridge.
3. Begin to prepare Air fried lemon pepper calamari. Put cornflour, egg and breadcrumbs into separate wide shallow bowls. Add lemon pepper seasoning to breadcrumbs and stir to combine.
4. Begin to prepare Air fried sesame crusted fish cocktails. Put flour, egg and breadcrumbs into separate wide shallow bowls. Add sesame seeds to breadcrumbs and stir to combine. Put half of the fish pieces into the flour and toss to coat, transfer to egg and toss to coat, then coat in breadcrumb mixture. Arrange on the Philips XXL Airfryer Double Layer Rack. Repeat with remaining fish, flour, egg and crumb mixture. Set aside.
5. Put half of the calamari strips into the cornflour and toss to coat, transfer to egg and toss to coat, then coat in breadcrumb mixture. Repeat with remaining calamari, flour, egg and crumb mixture. Arrange in a single layer in the Airfryer basket, spray generously with oil eventually placing the Double Layer Rack with fish pieces on top of the filled basket. Spray fish with oil.
6. Set temperature to 200C and time to 10 minutes. Press the dial in to begin cooking. Remove fish layer, and cook calamari for a further 3 minutes.
7. Meanwhile, to cook Air fried oysters Kilpatrick, divide bacon between the oysters and top with sauce mixture. Arrange oysters on Double Layer Rack. Set temperature to 200C and time to 3 minutes. Press the dial in to begin cooking.
8. Meanwhile, arrange calamari and fish on prepared platter or stand.
9. Carefully remove oysters, as the shells will be very hot, sprinkle with parsley and serve on a bed of rock salt. Serve immediately.
