Hi Friends! Today I'm sharing 3 simple, healthy comfort food recipes that can all be made in your crockpot/slow cooker! These meals are delicious and will warm you from the inside out on a cold day. Grab some coffee or hot cocoa and a warm, fuzzy blanket and join me as I show you how to make these delicious dinners!
Included in this video are Crockpot Chicken Noodle Soup, Crockpot Shepherds Pie and Crockpot Kielbasa/Potato Stew.

Crockpot Chicken Noodle Soup:

*I used 12 oz frozen peas/carrots instead of 2 cups of mixed veggies, and I also added a cornstarch slurry (2T cornstarch and 2T water) to thicken the broth.
Crockpot Shepherds Pie:

* I added 2 tablespoons of steak sauce to give it a little extra flavor
Kielbasa and Potato Stew:
13 oz kielbasa (I used beef)
3 large potatoes, scrubbed
1 medium yellow onion
8-12 oz shredded cabbage
1 cup apple juice
1/2 cup water
1-2 tablespoons Dijon mustard
Black pepper to taste
1 teaspoon caraway seeds (optional)
Slice potatoes into bite size pieces and add to crockpot.
Thinly slice onion and kielbasa. If desired, saute these in a bit of oil until the kielbasa is browned and the onions are soft. Add both to the crockpot.
In a bowl whisk together apple juice, water, mustard and pepper.
Pour apple juice mixture into crockpot.
Sprinkle caraway seeds over kielbasa mixture.
Cook on low 4-6 hours, until potatoes are tender.
Add cabbage into crockpot. Cook on low 30 minutes. Then mix cabbage into kielbasa mixture and cook on low another 30 minutes, or until cabbage has softened.
