I made it on a whim last night so used the veggies I had. The tomatoes made my sauce watery in the oven so I had to dry it out on the stovetop. Thank god for Manipuri pots that can go inside the oven as well as directly on the flame.
A nice combination of vegetables to use is:
~Zucchini green and yellow
~Eggplant
~Potato / sweet potato
~Bell pepper
~Onion
If you have the time and you like it, make tomato sauce and white sauce (Béchamel) and spread both at the bottom of the dish, then top with veggie slices, cover and bake.

Try and select the veggies so that the slices are similar in diameter- won’t affect the taste of the dish but it looks much prettier that way:)
Also, don’t stack the slices one by one it will take forever. Make a stack of 10-12 slices, layer and so on. You can also do this in a square or rectangular baking dish by making rows with these stacks instead of going around in a circle.
