成分:
麵包體:
230克麵包粉
6克咖啡粉
3克酵母
100克牛奶
2克鹽
1個雞蛋
35克白糖
15克奶粉
軟化黃油25克
墨西哥醬:
蛋糕粉40克
黃油40克
糖粉40克
咖啡粉4克
雞蛋液40克
做法:
(1)把麵包粉 、咖啡粉 、酵母 、牛奶 、鹽 、雞蛋 、白糖 、奶粉 全部倒入廚師機裡面,先低速攪拌均勻 ,再高速揉出厚膜狀態 ,加入軟化黃油
(2)先低速攪勻 ,再高速揉出薄膜 ,取出麵團 ,用手整理光滑 ,放入大碗裡面發酵至兩倍大
(3)取出發酵好的麵團 ,放揉麵墊上按壓排氣 ,再平均分成6個均勻的小麵團 ,再把每個麵團揉光滑 ,擺入烤盤裡面
(4)放進烤箱 ,35度發酵至1.5倍大
(5)接著製作墨西哥醬,蛋糕粉、黃油、糖粉 、咖啡粉,全部倒入大碗裡面攪拌均勻
(6)加入雞蛋液 ,繼續攪拌均勻 ,裝入裱花袋裡面 ,擠在麵包上面
(7)全部擠好以後 ,直接放進預熱好的烤箱 ,溫度180攝氏度(356華氏度)
25分鐘左右 ,烤好的麵包取出來

practice:

(3) Take out the fermented dough, put it on the kneading pad to press the air, and then divide it into 6 even small doughs, knead each dough smoothly, and put it into the baking pan
(4) Put it in the oven, ferment at 35 degrees to 1.5 times the size
(5) Then make Mexican sauce, cake flour, butter, powdered sugar, coffee powder, pour all into a large bowl and stir well
(6) Add the egg liquid, continue to stir evenly, put it in a piping bag, and squeeze it on top of the bread
(7) After all are squeezed, put it directly into the preheated oven, the temperature is 180 degrees Celsius (356 degrees Fahrenheit)
