This orange brioche is super soft and so so yummy.
I actually messed up the recipe, because I accidentally mixed two different recipes I saw at @bakewithpaws. I wanted to make the orange bread but I planned to make the matcha bread too and when I prepared the sweat stiff starter and the yudane dough it was already late and I mixed both recipes up and I didn’t have all the ingredients.
So I’ll write you the ingredients I used. But if you want the right recipe check out @bakewithpaws blog.
Ingredients:
Yudane dough:
65g bread flour
65g boiling water
Sweet stiff starter:
60g sourdough starter
180g bread flour
75g water
30 sugar
Main dough:
140g bread flour
All stiff starter
20g sugar
1 tsp salt
1 egg
50g orange juice
Zest from 2 oranges
50g butter
Handful of cranberries
I also made the dough a little bit different than her.
I first rubbed the sugar and the orange zest between my fingers to get all the taste of the orange on to the sugar. Then I just mixed all of the other ingredients besides the butter and the cranberries of the main dough and mixed until I had a smooth dough. Then I added the butter and mixed for about 10 minutes until window pane stage. Then I added the cranberries and mixed until they where incorporated well.
Let the dough rest up to one hour then form the loaf and put it in a loaf pan. Now it has to proof until it reaches the boarder of the loaf pan. I baked it at 170 degrees Celsius (static oven) for about 35-40 minutes. After 20 minutes I covered it with aluminum foil to avoid getting it to dark.
