8-MINUTE UBE KALAMAY
Option as toppings: toasted Coconut and Young rice (Pinipig)
Prep time: 10 minutes
Cooking time: 8 minutes
Yields: Serves 4 as a snack with coffee
1 can coconut milk (14.5 oz)
¾ cup white sugar
Ube extract (I used 2 tbsp for dark purple result)
1 ¾ cups Glutinous rice flour
Toppings:
Optional: Toasted Pinipig and coconut
Combine coconut milk, sugar and ube flavor. Stir well.
Add flour. Keep stirring until flour is dissolved and no lumps.
Add to the pan.
Use LOW LOW LOW LOW HEAT!
Keep stirring for 8 MINUTES – until it comes together and doesn’t stick at the bottom of the pan.
It should be a shiny sticky softer clay texture.
Pour into a plate.
Use a spatula to flatten top and mold.
Add your toppings.
Enjoy with coffee.
