INGREDIENTS
For Pesto Sauce:
1 oz (30g) pine nuts
2 ½ oz (60g) fresh basil
2 ½ oz (60g) Parmesan cheese
Two cloves of garlic
¼ tsp salt
3 oz (80 ml) Extra virgin olive oil
5 oz (150g) Mozzarella cheese
Two tomatoes
Balsamic sauce, to taste
Extra virgin olive oil, to taste
In a dry frying pan, toast the pine nuts over medium-low heat, about 3 minutes. Remove pan from heat. Place the pine nuts to a bowl and set aside to cool.
Blend the Parmesan cheese, basil with pine nuts, garlic, salt and olive oil. If the paste is too thick, add in more olive oil to reach the desired. Homemade pesto is one of the best ways to enjoy a bounty of fresh basil.
Cut two juicy tomatoes in thick rounds. Cut fresh Mozzarella cheese into slices. On a serving platter, arrange the tomato slices along with the mozzarella chunks.
Garnish with pesto sauce. Serve drizzled with Balsamic sauce and olive oil.
