With this ONE ingredients list, make THRE delicious Mexican Shakshuka dishes. Easy to make and ready to eat in minutes. !Ay, caramba!

To make the shakshuka:
1 medium onion
1 can of chopped tomatoes
1 big tomato
1 red pepper
1 can black or pinto beans
2 handful spinach
1 Tbsp of Shiracha
Salt
Pepper
Water to dilute to taste
For the 3 different combinations:
1 bag of nachos
1 packet of tacos
1 avocado
1/2 cup of hummus
spring onions
coriander
METHOD:
1. Slice the onion and sauté until golden brown, then add a can of chopped tomatoes.
2. Slice the pepper, add into the mix and let cook for about 10 minutes.
3. Dice and add the big tomato, siracha and beans (black, pinto or kidney are fine) with a good handful of spinach. Leave to cook on a medium heat, until the spinach melts into the mix.
4. Ready to serve with nachos or tacos. Or why not enjoy a shakshuka stew bowl with sliced quarter avocado, coriander and a tablespoon of hummus!?
