Natural organic rainbow colours of angku kueh. Really nice to eat and beautiful to look at!
Here are the natural color foods that I used.
Purple=purple sweet potatoes
Orange=orange sweet potatoes
Yellow=pumpkin
Green=pandan juice & white sweet potatoes
Blue=butterfly pea flower juice & white sweet potatoes
Red=beet root juice & white sweet potatoes
INGREDIENTS for the recipe
100g potatoes
70g glutinous rice flour
1 tsp rice flour
1tsp-1tbsp castor sugar
1 tbsp vegetable oil
45-50ml hot water/or juice
Tausa roll into balls
Mix all ingredients together to form a soft dough. Use this same recipe with the other colours as well. Divide dough into 6 portions and wrap each portion with a filling, roll back into a ball and press into angku mould. Knock out and put on banana leaves or parchment paper. Steam for 6 mins over medium heat. After steaming brush with vegetable oil.
