In todays video I show you how to par bake pizzas to help you get ready to host your next party.
Dough recipe: 40% poolish at 70% hydration
Total ingredients;
750 grams flour
525 grams water
5 grams of yeast and honey
22.50 grams of salt
Poolish;
210 grams of flour
210 grams of water
5 grams of yeast and honey
Mix together and let sit at room temp for one hour. After one hour place into the fridge for up to 18 hours.
After 18 hour take out the Poolish and let set at room temp for one hour. After the one hour mix the remaining ingredients.
540 grams of flour.
315 grams of water and poolish
22.50 grams of salt.
Once it all mixed together, knead for about 10 mins. Let rest at room temp for 15 mins, knead and repeat the 15 min rest time for about 2 or 3 times. Let sit at room temp for 1 hour. After the one hour ball and let set at room temp for 2-4 hours or until double in size. Cook and enjoy.
